Squash season is upon us! Every year I anticipate the first little butternut squashes arriving at my door in our Riverford Farm box. They start off small in September before growing into great giants of sweet squashiness in the late autumn and early winter. These fruits (not a vegetable due to its seeds!) are such versatile little additions to the autumn home. They can be used for sweet and savoury dishes, they can be used as centre pieces on tables and in front of houses to create a gorgeous autumnal display. Due to their thick skins they will last for months if stored correctly (cool, dry conditions) and their bright yellow flowers are a lovely addition to the garden in summer if you decide to grow some of your own.
As you can tell, I am quite the squash lover! So I thought it would be fun to share a few slow and sustainable ways we can enjoy squash this autumn.
